Ever thought what makes puri or bhatura rise? You roll the dough, press it, let the rolling pin work its wonder and make a circular thing. then slide it in piping hot oil, and in few seconds what you have is properly circular risen puri or bhatura? So what makes it “The Proper One”? Just like normal Indian Flatbread including Roti, Chapati, Phulka, Bhakhri, Parantha, Roomali Roti, Lachaa Paratha and many more, the base process to make puri remains the same. Taking atta, adding oil, salt, water and kneading the dough. For puri or bhatura some may add little maida or all-purpose flour, but the dough is harder i.e. the water content is lesser compared to other doughs. It is kept aside for some time and the process starts with making rolls from the dough and rolling it with rolling pin. The major thing to be taken care of is rolling the puri with light hands and not dipping the roll in dry atta. When these things are taken care of, best puris or bhaturas are ready to serve in a plate.

As mentioned above, the main purpose was to serve the desire of making perfect fried Indian breads. So we sat with our RnD team to discuss what can be done in order to attain this goal. The perfect gluten levels were to be maintained to get that puff of puri. And we then had what we needed to manufacture the atta!
How we made M.P. Lokwan Wheat Atta
After making other varieties of attas, one thing was sure; that was the basic process. The procured M.P. Wheat grain were selected and grinded in traditional stone grinders keeping the temperature intact and maintaining the natural fibers within. This led to the best quality premium atta with the gluten levels being high for the puff!
