As per our previous topic, we will talk about the summer, mangos and food. Half of the mango season is gone, and just half is left. When we talk about summer and mango we are talking about hapoos aam. The Mango pulp commonly known as aam ras in our regional language tastes best when made from Alphonso mango a.k.a. hapoos aam. All the generations love aam ras. When served chilled it tastes superb and amazingly delicious! There would be hardly someone who would dislike it. With guests milling around during the vacation, preparing humungous and tasty feasts is hardly practical or possible. At such times, Puri acts as saviour. Aam Ras and Puris are the perfect combo for any meal and is a great combination to serve huge appetite.

Let’s understand this by an example. Miloni is a modern woman recently married. This is an intercast love marriage and she is trying her best to adjust with her in-laws. They are amazingly supportive. Miloni lost her mother when she was 10. She has hardly had any authentic cuisine ever since! At her new house, she has this amazing opportunity as she is fed with all kinds of amazing and mouth-watering food items. She enjoys eating them and learns to cook. As she is newly-wed, she has to go to many of the relative’s places as the privilege of newlyweds. Being summer, she is offered the perfect the meal, aam ras and puri. In fact, she has always heard this combination as the food of gods, but had never tried it! The perfectly round puris, which are thoroughly cooked and precisely blown. She asked her aunt-in-law about this perfectly made puri and she said it was not just the art to cook that mattered but also the atta which makes the puri that matters.

Now, while reading this, one would think what is so mouthwatering or amusing about this? But let’s understand the flip side of a story. Not everyone is blessed with perfect food. It’s not about anyone being rich or poor. It’s about the perfect technique to cook! Just like it’s not a cake walk to make perfect aam ras, it not at all a cake walk to make puri. You need lokwan atta, the atta which is made from selected M.P. lokwaan wheat, processed in chakki and made perfectly fine with tests! This atta gives a perfect start to making delicious puris.
