One of the very popular and spoken types of the Indian Flatbread is Phulka Roti. Why the name Phulka Roti and how is it made? What is the specialty? The word “Phulka” is a verb form of the word “Phul”. And the word “Phul” means is “to Rise”. The Phulka rotis are perfectly inflated like a balloon when made. But how is it possible?
Any atta or the flour contains Glutenin and Gliadin. These are two kinds of proteins that are in the wheat grain. When atta is mixed with water (and salt or oil which is optional) these proteins are activated which forms gluten structures. When the dough is kneaded for a certain period of time, these structures gives elasticity and hence it does not fall apart when stretched, and that is why when it is rolled and cooked over pan for first two sides and put over the flame at third one is rises, and know as “Phulna” in Hindi and the roti is hence called “Phulka”. Because of this process, the rotis made are very light when consumed.
Phulka Rotis are origins of Gujarat and Rajasthan and hence most popular amongst Gujarati and Marwari/Rajasthani Families. But nonetheless, because of the food popularity and willingness to try new cuisine, nowadays it’s not fixed to a particular community.
