The earthy smell of the mushy ground. The cool breeze blowing through every crevice and every corner. The mellifluous pitter-patter of raindrops. And to accompany with it, a plate of hot and fresh bhajiyas. Aahaa. What a great combination. We all love to eat that great plateful of bhajiyas when it’s raining heavily. Monsoon; as a season may have a mixed review of likes or dislikes, but everyone appreciates the bhajiya with hot chai in this awesome climate. For some, its ‘love is in the air season’, for some its freshness season, for some its muddy season, and for some its “let’s eat bhajiya” season.

There are numerous varieties of bhajiya that everyone loves, but what makes it perfect is the besan or the gram flour. Without that, no bhajiya dish is possible. The first association with this whole rainy season when it comes to food is undoubtedly bhajiya. Now while talking about the process of cooking involved in this, it’s definitely gram flour which comes into the picture. Not all the besan or the gram flour is perfect and would result in that delicious starter. Also, because of monsoon, you really have to take care of this ingredient that it should not catch the dampness which might result in providing favorable conditions for tiny organisms to grow.

How to take care?
You would be using airtight containers or would be making it sure to pack it in a plastic bag and then storing it or refrigerating it. But what if the flour itself is not good? What if at some point in packing it was spoiled? Or what if the whole lot was contaminated? It is very necessary for you to buy the quality product which gives you an assurance of nothing of the above possibilities happening.
So check this “Always” list while buying besan, especially in monsoon.

• Buy a brand on which is trusted by many
• Check the manufacturing date
• Buy tried and tested product
• Check the quality checks that are usually done for the product
• Try a smaller quantity
• Do not over store it
• Once you have opened the packet, try to keep it in n airtight container for a week and if it still is left, keep it in the fridge

Always maintain above-mentioned checklist when it comes to buying and maintaining the gram flour or besan. And once you are in a routine with the tried and tested or newly tried and deliciously tasting brand, be loyal to it. You will always enjoy the mouth-watering bhajiyas in this monsoon!
